CHOCOLATE STRAWBERRY PIE

   Ingredients

  • Pastry for single-crust pie (9 inches)
  • 3 tablespoons sugar
  • 1 tablespoon cornstarch
  • 2 cups fresh chopped unsweetened strawberries
  • FILLING:
  • 1 package (8 ounces) cream cheese, softened
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream, whipped
  • TOPPING:
  • 2 ounces semisweet chocolate
  • 3 tablespoons butter

Directions

  • In a large saucepan, combine sugar and cornstarch. Stir in the strawberries; bring to a boil over medium heat. Boil and stir for 2 minutes. Remove from the heat; cool for 15 minutes. Spread into shell; refrigerate.
  • In a large bowl, beat the cream cheese, sugar and vanilla until fluffy. Fold in whipped cream. Carefully spread over strawberry layer. Cover and refrigerate for at least 1 hour.
  • In a microwave, melt chocolate and butter; stir until smooth.
  • Cool for 4-5 minutes. Pour over filling. Cover and chill for at least 2 hours. Store in the refrigerator. Yield: 6-8 servings.

You can us a homemade or purchased pie crust or the following recipe.

CRUST

This recipe is good to substitute instead of a pie crust. you can do it in a pie pan if you don’t try to put it up over the edge and flute it like a pie crust, it is too delicate for that and it will break.

 

1 cup butter (no substitutions)

1/3 cup heavy cream

2 cups flour

Sugar to sprinkle

Mix the butter, heavy cream, and flour. Chill for 2 hours.

Roll the dough out into a circle, then fold it in half and gently lift it into the pie pan. Open it up to be a full circle again and fit it to the pan. Trim it off just at the top of the pan and sprinkle with sugar. Bake 5 minutes at 350° with pie weights or a smaller light weight pie tin over the dough to prevent it from bubbling. After 5 minutes remove the weights or pie tin which ever you used and continue baking until the crust is starting to brown slightly. This should take about 15 minutes.

This last week I got to do something very special. Six years ago, my brother moved to California and I have not been able to see him since. I have missed him very much, he and I are the only living members of our immediate family.

My son and his family planned a vacation to go and visit my brother and they were very kind to ask me to join them. Driving down in their van was a wonderful experience I got to spend time with my grandkids and we got to do and see so many fun things along the way! One of the places we stopped was Sutter’s Mill where they first discovered gold in California. The kids got to pan for gold and they have a wonderful museum and guided tour of the area as well. We were walking along the American River with the ranger giving our tour when we came upon a little five-year-old girl that had lost her family. We were very grateful to have found her and assist the ranger in helping locate her family. After she was safely reunited with them our tour continued.

As I listened the ranger explained how people flocked to Sutter’s Mill from everywhere, even as far as China by the thousands to get their share of the gold when it was discovered. They left their homes and families, everything of value in their lives behind with the dream of finding this golden treasure. Some even took out loans to make the journey. I thought about how much it meant to me to be spending time with my son and his sweet family and of the opportunity to see my brother again after so many years. The thought that our families are our most precious treasure was running through my mind. I feel like the richest person in the world because I have a loving family, to me, there is nothing more important in this world. I hope that we will not take our families for granted and that we will cherish every minute that we have with them. They truly are the very best treasure on earth!

I CAN LAUGH ABOUT THIS NOW!

BACK PACK

I can laugh about this now; not the case when it happened, though! I hope it gives you a good laugh! Several years ago I was walking my grandson home from school and thought I could smell something funny. There were four of us in the group and I made everyone stop and checked all our shoes but they were all fine. I kept getting a whiff of something unpleasant but couldn’t find a source for this awful smell. I rechecked everyone’s shoes but still nothing. I finally decided it must have been something that we had passed on the way home and the smell got stuck in my nose. After we were home for a couple of hours I got in my grandson’s backpack to get started on homework. Well there it was the source of this terrible aroma, you guessed it, dog poop right there in his backpack. When I questioned him as to why he would do such a thing, the response I got was not what I had expected. He straightened himself up so proud and told me all about how they were studying Indians in school. They learned all about Indian clay that the Indians used to make pots and other wonderful useful things out of. He was so proud of himself that he had actually found Indian clay right there on the playground at school. He proclaimed “It is not every day that you make such a wonderful discovery!” He was more disappointed about me throwing away his Indian clay than he was about the backpack getting thrown away. Even after I explained what it really was. He was sure that grandma didn’t know what she was talking about and that I had thrown away a priceless treasure. There never seems to be a dull moment at our house! I hope you had a good laugh! I believe that we all need to find as many things as we can to laugh at. It’s good for the soul!

More Than You Are

 

I think so many times in life people miss out on what they might have had because we are afraid and we think we can’t do something or that we don’t deserve something. I believe we should all reach for the stars no matter how big the dream and believe we can have all our hearts desires. As you watch this video of Tim’s Place you will see that big dreams really can come true! Even for things that might seem impossible! Remember what Shifu told Po when he was encouraging Po to do something he felt he couldn’t do. Shifu said “if you only do what you can you will never be more than you are now”. Go ahead and reach for the stars!

GRANDMAS

Some grandmas are wild and crazy and some grandmas are quiet and reserved, but the one thing we all have in common is we love and adore our grandchildren!

The thing that inspired this blog was something that my granddaughter did when she was about a year old. I was having hot flashes and when she would see me fanning myself she would immediately drop all her toys and stare fanning herself. I GUESS SHE JUST LOOKED AT ME AND THOUGHT IT WAS TIME TO FAN OURSELVES. I have to tell you it made me laugh so hard we almost had another problem!

 

YOU KNOW A CHILD HAS BEEN RAISED BY GRANDMA WHEN!

They think the dab is what you do when your forehead perspires.

They are pro’s at lite brite and etch-a-sketch but don’t know how to play x box or play station.

They look up addresses and phone numbers in a telephone book and their friends have to teach them what hashtags and emoji’s are.

They have school clothes and separate play clothes.

They love Elvis but have no idea who Katy Perry is.

They love to bake, sew, knit and crochet.

They love to store things in empty cookie tins.

They think that everyone has plastic covered couches.

They think a water bottle is something you heat up and put on sore backs not something you drink out of.

They think the only way to curl your hair is by putting in brush or sponge roller and tying a scarf around your head while your hair dries.

They keep a Kleenex in their sleeve in case their nose runs.

They think that everyone irons their pillow cases.

They think you hang clothes on a line in the back yard to dry them.

They use encyclopedias for school reports.

Even if they think that I am funny sometimes, I am so glad that I am a grandma! Nothing is better than having a small child climb in your lap and wrap their little arms around your neck and say I LOVE YOU GRANDMA!

Delicious Marinade

Marinated Chicken

1 cup soy sauce

1 cup vegetable oil

2 cups lemon- lime soda

1 tablespoon garlic salt

Pour mixed ingredients over chicken breasts, turning to coat all pieces. Marinate in refrigerator for at least 12 hours turning once or twice to ensure marinade soaks in well. This works wonderfully with turkey as well. When you are ready cook it in the oven at 325 degrees for about 1 ½ -2 hours. You can also grill it on the barbecue, or even in a Dutch oven for camping trips.

OREO COOKIE DESSERT


Crust layer
1 package Oreo cookies crushed. Only the cookie part, scrap the frosting out. You can use it on graham crackers for another treat. (set enough aside to sprinkle on top)

 ½ cup butter

Cream cheese layer

1 – 8-ounce container frozen whipped topping (thawed)

1 – 8-ounce cream cheese, softened

1 cup powdered sugar

Chocolate Layer

1 (4 ounce) package Baker’s German sweet chocolate

1/3 cup milk

2 tablespoons sugar

1-4-ounce cream cheese, softened

1 – 8-ounce container frozen whipped topping (thawed)

Last Layer

1 – 8-ounce container frozen whipped topping (thawed)

In a saucepan, heat Baker’s German sweet chocolate and 2 tablespoons of the milk over very low heat until chocolate is melted, stirring constantly. 

Remove from heat and beat in the 4-ounce cream cheese, sugar, and the remaining milk until well blended. Refrigerate to cool for about 10 minutes. Fold in the whipped topping gently until smooth. 

Layer ingredients as follows

 1st layer

Crushed Oreos mix with melted butter and press this into bottom of 9×13 glass pan and refrigerate 1 hour.

2nd layer

Soften cream cheese on the counter or in the microwave and mix in the powder sugar and 1 – 8-ounce whipped topping. Spread on the cookie crumb layer.

3rd layer

Make the chocolate layer and spread this on the cream cheese layer that you have in the pan.

4th layer

1 – 8-ounce container of whipped topping spread on the chocolate layer. Sprinkle with the crushed Oreos you set aside and refrigerate until ready to serve.

Strawberry Pie

This is a quick and easy dessert for those last minute get together’s or anytime you need something fast.

4 cups cleaned and sliced strawberries

1 box Danish dessert mix (strawberry flavor)

1 premade Pie crust any kind

Follow the directions on the box of Danish dessert and you have a beautiful pie in less than a half hour.
