
1 ham bone with a little meat left on it
6 (15.5 ounce) cans white beans
8 cups water
½ teaspoon garlic powder
1 large onion (chopped)
1 tablespoon lemon juice
1 tablespoon honey
½ cup celery leaves (freshly chopped)
Salt and pepper to taste
2 ½ cups carrots (peeled and sliced)
Place all ingredients in a crock pot and cook on low about 9-10 hours. Remove the ham bone and take all the meat off it and cut the meat into bite size pieces. Put the meat back into the soup long enough for it to heat back up and discard the bone. Serve.
