Apricot Chicken

1 – 8-ounce bottle Russian Salad Dressing
1 package Lipton Onion Dry Soup mix

1 – 8-ounce Jar Apricot Preserves

1 tablespoon corn starch

8 chicken breasts

Mix together all ingredients except the chicken. Place the chicken in a casserole pan sprayed with nonstick cooking spray. Pour mixture over the chicken and cover with foil. Bake at 300 degrees for 2 hours. Remove the foil for last 20 minutes of baking. I like to save the liquid and pour it over rice to serve with the chicken.
